Recipe for Yorkshire Parkin

Parkin is a traditional Yorkshire cake that is often eaten around Bonfire Night. With the help of my six year old daughter I've made some for this year and it is delicious. Here's the recipe for anyone that would like to make your own.

Traditional homemade Yorkshire Parkin cake

Ingredients for Yorkshire Parkin

  • 220g butter or margarine
  • 110g soft brown sugar
  • 200g golden syrup
  • 55g black treacle
  • 120g oats
  • 200g self-raising flour
  • 4 tsp ground ginger
  • 1 tsp mixed spice
  • 2 tsp ground nutmeg
  • 2 eggs
  • 3 tbsp milk

Method

Pre-heat the oven to 140 °C / gas mark 1

Grease an 8in x 8in square cake tin (20cm x 20cm)

Over a low heat melt the butter, sugar, golden syrup and treacle. Remove from the heat once all the ingredients have mixed together and the butter is completely melted (do not allow to boil). Leave to one side whilst preparing the rest of the ingredients.

Sift the flour into a mixing bowl and add the ginger, spice and nutmeg. Mix together.

Add the butter / syrup mixture from the pan a little at a time, and mix well.

Beat the eggs and add a little at a time to the rest of the ingredients and beat well with a wooden spoon.

Add them milk and mix well.

Pour the mixture into the prepared tin and cook for 1 ½ hours until firm to touch.

Leave to cool, then eat, or store in an airtight container.
